Unfortunately, this is the only photo I have of the tlacoyos Brynne & I made on Wednesday.  They’re little “boats” made out of masa meal and then we stuffed them with sauteed spinach & onion.  We made a chipotle ranchero sauce with some roasted anaheim & poblano peppers as well as tomatoes and onions.  Served with beans and risotto (we wanted a grain & I needed to test the recipe below)!

I had my last one of these for a while.  I’d been eating a lot of them near the end of school because of La Boite being right next door, but now I’M DONE WITH SCHOOL!!!…At least the classes…I still have to assist there.  Nevertheless, a huge weight has been lifted and I’m excited to have more of my own schedule full of productivity and such.  Let’s hope I keep this sense of motivation :)
